Egg Wrap
- 1/2 tsp cornstarch
- 1 tsp water
- 2 large eggs

- 1/2 Tbsp coconut oil or butter
Fillings
- 1/3 cup finely shredded Swiss cheese
- 4 thin slices deli turkey
- 1 small tomato, thinly sliced
- 1/2 avocado, thinly sliced
- 1/2 cup spinach
Instructions
- Prepare Egg Mixture: In a mixing bowl, whisk together cornstarch and water until combined. Add in the eggs, salt, and pepper, then whisk thoroughly to create a smooth, slightly thickened egg batter.
- Heat Skillet: Preheat a 12-inch non-stick skillet over medium heat on the stove for 1 to 2 minutes to ensure it’s adequately hot before cooking.
- Cook Egg Wrap: Add coconut oil or butter to the skillet and evenly spread it to coat the surface. Pour in the egg mixture and tilt the pan to spread the eggs in a thin, even layer, resembling crepe batter. Let it cook undisturbed for 2 to 3 minutes, gently lifting and swirling the pan occasionally to keep the egg layer even, until the bottom is set and the top is mostly set but slightly moist.
- Flip Egg Wrap: Loosen the edges of the egg wrap carefully using a flat spatula. Slide the spatula underneath and flip the wrap onto the other side. Immediately sprinkle shredded Swiss cheese evenly over the top side and cook for about 1 more minute, until the cheese melts and the egg is fully set.
- Assemble Wrap: Remove the egg wrap from heat. Layer the deli turkey slices, tomato slices, avocado slices, and fresh spinach evenly over one half of the egg wrap.
- Roll and Serve: Carefully roll the egg wrap over the fillings, slice in half if desired, and serve immediately to enjoy a fresh, warm, and flavorful meal.
