Instructions

  1. Prepare Carrots: Peel and cut the 2 pounds whole carrots into 1 to 1 ½ inch pieces, then place them in the bottom of a 4-quart crockpot.
  2. Add Seasonings: Add ½ cup unsalted butter (cubed), 3 tablespoons honey, 2 teaspoons minced garlic, 1 teaspoon chopped parsley, ½ teaspoon salt, and 2-3 cracks of freshly ground black pepper on top of the carrots.
  3. Cook: Cook the mixture on HIGH for 1 hour 30 minutes or on LOW for 3 hours until the carrots are fork tender and fully cooked through.
