Ingredients
Scale
Chicken Strips
- 1 pound chicken tenders
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chicken bouillon
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- olive oil spray
Roasted Garlic Yogurt Sauce
- 1 head of garlic
- 1 tablespoon olive oil
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat and prepare baking sheet: Preheat the oven to 425°F. Place a sheet of parchment paper on a baking sheet and spray with cooking spray to prevent sticking.
- Roast garlic: Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast in the oven for about 30 minutes while preparing the chicken. This softens the garlic and enhances its flavor.
- Create breading station: Arrange three shallow bowls: one with flour, one with beaten eggs, and one with a mix of panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, chicken bouillon, Italian seasoning, salt, and black pepper. Mix the breadcrumb mixture until combined.
- Coat chicken strips: Pat the chicken tenders dry with paper towels. Coat each strip first in flour, then dip into the egg mixture, and finally press into the breadcrumb mixture to fully coat. Place the coated strips on the prepared baking sheet.
- Bake chicken: Lightly spray the coated chicken strips with olive oil spray. Bake for 22 minutes, flipping halfway through, until the exterior is golden brown and the internal temperature reaches 165°F for safe consumption.
- Prepare garlic yogurt sauce: Once the garlic is roasted and cooled, squeeze the softened cloves out and mix into the Greek yogurt. Add lemon juice and season with salt and pepper to taste. Serve this sauce alongside the baked chicken tenders.
Notes
- Store leftover chicken tenders in an airtight container in the refrigerator for up to 3 days.
- Reheat leftovers in an air fryer to restore crispiness instead of using a microwave.
- Use parchment paper on the baking sheet for easier cleanup and to prevent sticking.
- Ensure chicken reaches an internal temperature of 165°F for food safety.
