Ingredients
Scale
Blueberry Compote
- 2 cups fresh blueberries
- 1/4 cup granulated sugar (adjust to taste)
- 1 Tbsp water
Parfait Assembly
- 2/3 cup fresh blueberries
- 2 2/3 cups low fat plain Greek yogurt
- 1 cup cinnamon granola (store-bought or homemade, broken up into smaller clusters)
Instructions
- Prepare Blueberry Compote: In a small saucepan over medium heat, combine 2 cups of fresh blueberries, granulated sugar, and water. Bring the mixture to a simmer, stirring frequently.
- Cook the Compote: Continue cooking and stirring until the blueberries burst and the mixture thickens into a compote, approximately 5 to 8 minutes. Aim to have about 1 cup of compote.
- Chill the Compote: Pour the blueberry compote into a bowl and refrigerate until completely cooled. Keep the compote chilled until ready to assemble the parfaits to maintain freshness.
- Assemble the Parfaits: Using four 12-ounce cups, layer the ingredients starting with 1/3 cup of Greek yogurt, followed by 2 tablespoons of blueberry compote, 2 tablespoons of cinnamon granola, and 1 tablespoon of fresh blueberries.
- Repeat Layers: Repeat the layering process one more time in each cup to build a double-layered parfait. Serve immediately to keep the granola crunchy.
Notes
- For best texture, wait to assemble the parfaits just before serving to prevent the granola from becoming soggy.
- You can adjust the sweetness of the blueberry compote by varying the sugar amount to your taste preference.
- Homemade cinnamon granola adds a flavorful crunch but store-bought versions work well too.
- Use low fat Greek yogurt for a creamy yet lighter parfait.
- These parfaits can be prepared ahead of time by chilling the compote and fresh blueberries separately, then assembling just before serving.
