- Prepare Pumpkin Mixture: Combine the pumpkin puree, water, granulated sugar, and pumpkin pie spice in a medium saucepan. Cook over medium-low heat for about 10 minutes, stirring frequently to integrate the ingredients and dissolve the sugar.
- Set Up Straining Station: Place 2-3 layers of cheesecloth inside a fine mesh strainer with plenty of overhang. Position the strainer over a bowl or measuring cup to catch the strained liquid.
- Strain Pumpkin Mixture: Once the pumpkin mixture has cooled, add about ¼ to ⅓ of it into the cheesecloth-lined strainer. Use a large metal spoon to press the mixture, extracting as much liquid as possible. Alternatively, gently squeeze the cheesecloth to release transparent liquid, avoiding pulp.
- Discard Pulp and Repeat: Discard the remaining pulp and repeat this process with the rest of the pumpkin mixture until you have about 1 ½ cups of strained liquid.
- Combine and Simmer Juice: Rinse the saucepan and pour the strained pumpkin liquid back into it. Add the apple juice and vanilla extract. Simmer the mixture over low heat until it reduces back to 4 cups, approximately 10 minutes.
