Description

Delicious grilled honey butter chicken featuring tender, juicy chicken thighs or breasts seasoned with smoked paprika and garlic powder, grilled to perfection, and basted with a fragrant honey butter garlic sauce. Perfect for a quick and flavorful summer meal.

Ingredients

Scale

Chicken

  • 1 ½ pounds boneless skinless chicken thighs or breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

Honey Butter Sauce

  • 3 tablespoons butter
  • ⅓ cup honey
  • 1 garlic clove, minced

Garnish

  • chopped chives for topping

Instructions

  1. Preheat the grill: Heat the grill to the highest setting ensuring it reaches high heat for proper searing.
  2. Season the chicken: Pat the chicken dry and season all over with kosher salt, black pepper, smoked paprika, and garlic powder evenly.
  3. Grill the chicken: Place the chicken pieces on the hot grill grates and cook for 6 minutes on one side, then flip and grill for an additional 6 minutes until cooked through and nicely charred.
  4. Make the honey butter sauce: While the chicken grills, combine butter, honey, and minced garlic in a saucepan over medium heat. Stir constantly until butter is melted and the mixture bubbles. Remove from heat immediately to prevent burning.
  5. Baste the chicken: Brush the grilled chicken generously with the honey butter sauce on both sides. Repeat brushing once or twice more to build up a flavorful glaze.
  6. Serve: Remove the chicken from the grill and give it a final brush of honey butter sauce. Garnish with chopped chives and serve hot with your favorite summer sides.

Notes

  • Use boneless skinless chicken thighs for juicier results; breasts can be used for leaner option.
  • If you don’t have a grill, a grill pan on stovetop can be substituted.
  • Adjust honey amount to taste for sweetness preference.
  • Butter can be substituted with a plant-based margarine for a lighter or dairy-free version.
  • Ensure not to overcook chicken to keep it tender and moist.
