  • 1 small yellow onion, finely chopped (1 cup)
  • 4 cloves garlic, minced (1 1/2 Tbsp)
  • 1 (28 oz.) can diced tomatoes

  • 3 Tbsp chopped fresh parsley
  • 1 1/2 tsp McCormick Dried Oregano
  • 1/4 tsp McCormick Red Pepper Flakes, more or less to taste
  • Salt and freshly ground black pepper to taste
  • 1 1/4 lbs large shrimp (21/25), peeled and deveined
  • 5 oz. feta cheese, crumbled (reduced fat is fine)
  • 2 Tbsp chopped fresh mint
  • Lemon wedges, for serving


Instructions

  1. Heat olive oil: Heat olive oil in a large skillet over medium heat until shimmering, preparing the pan for sautéing.
  2. Sauté onion and garlic: Add the finely chopped onion and sauté until tender and translucent, about 4 to 5 minutes. Then add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add tomatoes and seasonings: Pour in the canned diced tomatoes along with honey, chopped fresh parsley, dried oregano, and red pepper flakes. Season the mixture with salt and freshly ground black pepper to your taste preference.
  4. Simmer sauce: Bring the mixture to a gentle simmer. Reduce the heat to medium-low and continue simmering, stirring occasionally until the sauce thickens slightly, about 5 minutes.
  5. Cook shrimp: Add the peeled and deveined shrimp to the sauce, ensuring they are submerged. Cover the skillet and cook for about 6 to 7 minutes, tossing the shrimp halfway through, until they are cooked through and opaque.
  6. Add feta and mint: Remove the skillet from heat. Sprinkle crumbled feta cheese and chopped fresh mint evenly over the shrimp and sauce.
