- Heat oil and sauté aromatics: In a large pot over medium-high heat, add 2 tablespoons olive oil. Add 1 cup chopped onion and ½ chopped jalapeno, cooking until the onion is soft, about 3 minutes. Then add 3 minced garlic cloves and cook for an additional 30 seconds.
- Add liquids and chicken: Stir in 2 cups shredded chicken, 2 cups chicken broth, 1 cup milk, and 1 cup heavy whipping cream. Bring the mixture to a simmer.
- Add beans, chilies, and spices: Mix in 3 drained 15-ounce cans of white beans, 2 cans of diced green chilies, 1 tablespoon cumin, ¾ teaspoon salt, ¼ teaspoon paprika, ¼ teaspoon cayenne, and ½ teaspoon oregano. Cover the pot and let it simmer over low heat for 30 minutes to meld flavors.
- Finish with sour cream and serve: Remove the pot from heat and let the chili sit for 2-3 minutes. Stir in ½ cup sour cream until blended. Serve topped with shredded cheese, additional sour cream, jalapeños, cilantro, and salsa as desired.
