- 4 (7 oz) skinless salmon fillets
- 3 Tbsp light olive oil
- 3 Tbsp lime juice
- 2 tsp lime zest (from 2 limes)
- 3 Tbsp honey
- 1 Tbsp minced garlic (3 cloves)
- 1 1/4 tsp salt, or to taste
- 1 tsp freshly ground black pepper
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 Tbsp chopped cilantro (optional)
Instructions
- Prepare the marinade: In a small mixing bowl, whisk together the light olive oil, lime juice, lime zest, honey, minced garlic, salt, and black pepper until well combined.
- Marinate the salmon: Place the salmon fillets in a gallon-size resealable bag, pour the marinade over the salmon ensuring all sides are coated, press out excess air, and seal the bag.
- Rest the salmon: Let the salmon rest at room temperature for 20 minutes to allow flavors to infuse, but no longer than 30 minutes for food safety.
- Preheat the broiler: Position the oven rack in the center of the oven and preheat the broiler on high for about 5 minutes.
- Prepare the baking sheet: Line a rimmed baking sheet with aluminum foil and spray it with vegetable oil cooking spray to prevent sticking.
- Arrange the salmon: Remove the salmon from the marinade and place the fillets on the baking sheet, leaving space between each piece. Evenly sprinkle the tops with ground cumin and ground coriander.
- Broil the salmon: Place the salmon under the preheated broiler. Broil for about 4 minutes, checking frequently to avoid over-browning. If necessary, tent loosely with foil to prevent excess browning. Continue broiling for an additional 6 minutes or until the salmon reaches your desired doneness in the center.
- Serve: Remove the salmon from the oven, sprinkle with chopped cilantro if using, and serve immediately. For extra zest, serve with lime wedges for spritzing over the fillets.
Notes
- Do not marinate the salmon for more than 30 minutes to prevent the acid in the lime juice from breaking down the fish texture too much.
- Keep an eye on the salmon while broiling as it can quickly go from perfectly cooked to overdone.
- Tenting with foil helps to prevent the top of the salmon from burning while the inside finishes cooking.
