Description

  • 3 Tbsp light olive oil
  • 3 Tbsp lime juice
  • 2 tsp lime zest (from 2 limes)
  • 3 Tbsp honey
  • 1 Tbsp minced garlic (3 cloves)
  • 1 1/4 tsp salt, or to taste
  • 1 tsp freshly ground black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 Tbsp chopped cilantro (optional)


Instructions

  1. Prepare the marinade: In a small mixing bowl, whisk together the light olive oil, lime juice, lime zest, honey, minced garlic, salt, and black pepper until well combined.
  2. Marinate the salmon: Place the salmon fillets in a gallon-size resealable bag, pour the marinade over the salmon ensuring all sides are coated, press out excess air, and seal the bag.
  3. Rest the salmon: Let the salmon rest at room temperature for 20 minutes to allow flavors to infuse, but no longer than 30 minutes for food safety.
  4. Preheat the broiler: Position the oven rack in the center of the oven and preheat the broiler on high for about 5 minutes.
  5. Prepare the baking sheet: Line a rimmed baking sheet with aluminum foil and spray it with vegetable oil cooking spray to prevent sticking.
  6. Arrange the salmon: Remove the salmon from the marinade and place the fillets on the baking sheet, leaving space between each piece. Evenly sprinkle the tops with ground cumin and ground coriander.
  7. Broil the salmon: Place the salmon under the preheated broiler. Broil for about 4 minutes, checking frequently to avoid over-browning. If necessary, tent loosely with foil to prevent excess browning. Continue broiling for an additional 6 minutes or until the salmon reaches your desired doneness in the center.
  8. Serve: Remove the salmon from the oven, sprinkle with chopped cilantro if using, and serve immediately. For extra zest, serve with lime wedges for spritzing over the fillets.

Notes

  • Do not marinate the salmon for more than 30 minutes to prevent the acid in the lime juice from breaking down the fish texture too much.
