For the egg rolls:
- 3 medium ripe avocados
- 2 tablespoons lime juice
- ⅓ cup chopped sun-dried tomatoes packed in oil and drained
- ¼ cup minced red onion
- ¼ cup chopped cilantro

- ½ teaspoon cracked pepper
- 8-10 egg roll wrappers
- Oil spray
For the dipping sauce:
- ¼ cup sour cream
- ¼ cup mayonnaise
- ½ lime juice of
- 1 chipotle pepper in adobo sauce
- 1 clove garlic
- 2 teaspoons dried parsley
- 1 teaspoon dried dill
- 1 teaspoon onion powder
- 1 teaspoon dried chives
- ½ teaspoon salt, more to taste
- Milk as needed to reach desired consistency
Instructions
- Prepare the avocado mixture: Dice the avocados and place them in a mixing bowl. Add lime juice, chopped sun-dried tomatoes, minced red onion, chopped cilantro, salt, and cracked pepper. Stir well to combine, mashing the avocado slightly to keep the mixture chunky.
- Assemble the egg rolls: Spoon about 1/4 cup of the avocado mixture onto an egg roll wrapper. Fold the bottom of the wrapper over the filling, then fold in each side and roll tightly. Dip your finger in water and brush it on the top corner to seal the wrapper firmly. Repeat with the remaining wrappers and filling.
- Oil the egg rolls: Lightly spray each side of the egg rolls with oil spray to ensure crispiness during cooking.
- Arrange in air fryer: Place egg rolls in the air fryer basket in a single layer with space between each for air flow. You may need to cook in two batches depending on your air fryer size.
- Cook the egg rolls: Air fry at 390 degrees Fahrenheit for 9 minutes, flipping halfway through, until golden brown and crispy.
- Prepare the dipping sauce: In a small bowl, whisk together sour cream, mayonnaise, and lime juice. Finely mince the chipotle pepper and garlic, then add them to the bowl along with dried parsley, dried dill, onion powder, dried chives, and salt.
- Adjust sauce consistency and flavor: Whisk all ingredients thoroughly. Add additional salt, lime juice, or minced chipotle pepper to taste. If desired, thin the sauce with a splash of milk until the preferred consistency is reached.
- Serve: Serve the hot, crispy avocado egg rolls immediately with the prepared dipping sauce.
